"This recipe is originally from Gourmet Magazine. I use the basic method and change the spices to taste; my favourites include a southwest blend and a Cuban spice blend. I use a cast iron pan for this, but any oven-safe skillet would work. My favourite tenderloin recipe!"

Step by Step Method

Step 1

Preheat oven to 350.

Step 2

Scatter spice blend on some parchment paper or chopping board. Roll the tenderloins in the spices until well coated on all sides and ends.

Step 3

Heat oil in skillet over medium flame. Add pork and brown on all sides for about 4 minutes.

Step 4

Place skillet in the oven and cook for 20 minutes. (Internal temp about 140)

Step 5

Remove from oven and let rest 10 minutes, tented with foil.

Step 6

Good warm or cold.
