"This is good heated, toasted, or cold, with or without butter. Low calorie substitute for the buttermilk substitute: 2 cups lukewarm nonfat milk and 2 tablespoons fresh lemon juice. Let stand 5 minutes, then beat briskly."

Step by Step Method

Step 1

Sift the first 5 ingredients and stir in the raisins or currants.

Step 2

Combine the eggs, the buttermilk, and the butter. Beat.

Step 3

Add the liquid mixture to the dry ingredients and mix just enough to moisten thoroughly.

Step 4

Turn the batter into a greased 9x5½x3" loaf pan and bake at 350'F. for about 1 hour.

Step 5

Remove from pan immediately. It's important to allow the loaf to cool thoroughly before slicing.
