  • 3 cups all-purpose flour (sifted)
  • 1/2 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups currants (or seedless raisins)
  • 2 large eggs (beaten light)
  • 2 cups buttermilk
  • 2 tablespoons melted butter

How to Make

  • Step 1: Sift the first 5 ingredients and stir in the raisins or currants.

  • Step 2: Combine the eggs, the buttermilk, and the butter. Beat.

  • Step 3: Add the liquid mixture to the dry ingredients and mix just enough to moisten thoroughly.

  • Step 4: Turn the batter into a greased 9x5½x3" loaf pan and bake at 350'F. for about 1 hour.

  • Step 5: Remove from pan immediately. It's important to allow the loaf to cool thoroughly before slicing.
