"A hearty chowder, good served with hot soda bread. Be careful not to overcook the scallops, as they can turn rubbery. Sea scallops are large. If all you can find is the smaller bay scallops, do not quarter them, but leave whole. For the mixed seafood, use shrimp, mussels, calamari rings, etc."

Step by Step Method

Step 1

Melt butter in a large saucepan over medium heat. Add scallops and cook, in batches, for 5 minutes, until just opaque. Remove from pan and set aside.

Step 2

Add the bacon to the pan and cook 3-4 minutes, until it starts to brown.

Step 3

Add the onion, celery, carrots and potatoes. Season with salt and pepper, cover and cook over medium-low heat, stirring occasionally, until vegetables start to soften.

Step 4

Add thyme and 2 tablespoons of the parsley to the vegetables. Pour in broth and cover. Bring to a boil. Reduce heat and simmer 15 minutes.

Step 5

Remove thyme sprigs; discard. Lightly crush some of the vegetables with the back of a wooden spoon. This will help thicken the liquid. Pour in the scalded milk.

Step 6

Add the scallops and mixed cooked seafood to the pan. Cook until heated through but do not let mixture boil.

Step 7

Check seasonings, and add lemon juice.

Step 8

Ladle into warm bowls and sprinkle with remaining parsley.

Fairly easy to make and even easier to eat! I used scallops (bay were on sale), shrimp and clams. Great tasty chowder. Loved our Irish choice this year!

This is a great chowder! I loaded it with sea scallops, crab, shrimp and mussels. We had it for supper on St Patrick's Day along with some Irish Soda Buns. So filling and delicious!

I used shrimp and clams this time. The result was a very tasty chowder that we enjoyed for St Patrick's Day. A nice change from the traditional corned beef that I usually make. I won't be waiting until next year to have this again!

I made this chowder for St Patty's Day along with my Irish Soda Bread. It was a dynamic duo and tasted great together. I used sea scallops, clams, haddock and shrimp and loaded it up with the seafood. It was so delicious that I found myself having a second bowl! Chowder is a favorite with my gang and we love our seafood too so this fit like a glove into my Irish themed dinner for Saint Patty's day. I used shrimp and haddock with the sea scallops. The chowder was served with Linda's Irish Soda Bread and they were magically delicious just like me Lucky Charms!
