Step by Step Method
Step 1
Preheat the oven to 425 degree Fahrenheit.
Step 2
Make a bed of vegetables by putting the carrots and onions in the middle of a roasting tray.
Step 3
Slice one of the garlic heads in half horizontally, and leave the unpeeled cloves of the other head of garlic loose:; add to roasting tray.

Season chicken all over.

Place the chicken breast-side down on top of the vegetables

Then stuff the lemon halves into the chicken.

Pour the wine over it and then season generously with thyme, salt and pepper.

Roast for about 45 minutes.
Step 9
Take the roasting tin out of the oven, flip the bird over and squeeze some honey on top.
Step 10
Season again and cook for another 15-20 minutes. At this stage, take it out and leave for a few minutes.
Step 11
Give the legs a wiggle: they should move about freely.
