Step by Step Method
Step 1
Place frozen potato and cauliflower in a large saucepan of boiling water and boil for 5 minutes or until just tender.
Step 2
Meanwhile, heat oil in a large frying pan over medium-high heat and cook onion for 3 to 4 minutes or until soft and then add curry paste and cook for 1 minute or until fragrant.
Step 3
Drain potato and cauliflower and add to frying pan with frozen peas and cook for 2 minutes, pressing vegetables with the back of a spoon to smash and season with salt and pepper and now add coconut milk and stir to combine and cook for 1 minute or until heated through.
Step 4
Remove from heat and stir in coriander and serve smash topped with coriander sprigs.
