Ingredients

The ingredients are:
  • 250 grams cauliflower (florets, 1/2 frozen 500 grams packet)
  • 2 teaspoons oil (vegetable oil)
  • 1 onion, chopped (brown onion)
  • 1 1/2 tablespoons curry paste (Rogan josh curry paste)
  • 3/4 cup peas, frozen
  • 165 ml coconut milk (can)
  • 1/4 cup chopped coriander (fresh coriander, plus extra sprigs to serve)

How to Make

  • Step 1: Place frozen potato and cauliflower in a large saucepan of boiling water and boil for 5 minutes or until just tender.

  • Step 2: Meanwhile, heat oil in a large frying pan over medium-high heat and cook onion for 3 to 4 minutes or until soft and then add curry paste and cook for 1 minute or until fragrant.

  • Step 3: Drain potato and cauliflower and add to frying pan with frozen peas and cook for 2 minutes, pressing vegetables with the back of a spoon to smash and season with salt and pepper and now add coconut milk and stir to combine and cook for 1 minute or until heated through.

  • Step 4: Remove from heat and stir in coriander and serve smash topped with coriander sprigs.
