"WhenI lived in Vancouver at lunchtime I would often go down to Granville Island Market. There was an Italian vendor that sold these on a lovely soft bun. This is very tasty with or without a bun. If hot is too spicy use mild or medium sausages. The sausages that I buy are from a local butcher and have very little fat. If you are using a commercial brand you may want to precook the sausages and remove the fat from the skillet before cooking the vegetables. You could also prick the sausages and boil them for 5 minutes then continue with this recipe."

Step by Step Method

Step 1

Over medium high heat place all the ingredients in a large skillet

Step 2

Prick the sausages, turn often stirring the vegetables

Step 3

Cover with a lid turn heat down to medium continue cooking until the sausages are cooked total time about 15 minutes

Step 4

Serve on a plate or in a bun Mmmmmmmmm Good

I made it yesterday to serve 2, and saved half for today for lunch. I sprinkled a little fennel on the veggies before sauteing them and used a whole grain flatbread to roll it all up in. I loved the addition of the mushrooms. Such a nice sandwich and tasted extra delicious to me! Thank you for another great lunch idea Bergy! Linda
