"This is a simple whole-egg mayonnaise that I created to serve with crab cakes. Number of servings is a guess--it makes about 1 1/4 cups. I like to make this with sunflower oil, but use whatever you prefer. Cook time is chilling time."

Step by Step Method
Step 1
Place egg, lime juice, salt, garlic powder and 1 tablespoon oil in the bowl of a food processor. Pulse to mix.
Step 2
With machine running, slowly pour in oil--drop by drop at first, and then in a thin, steady stream as mayonnaise begins to thicken. If too thick, add a little more lime juice.
Step 3
Chill for one hour to blend flavors (optional).
