Step 1: Place egg, lime juice, salt, garlic powder and 1 tablespoon oil in the bowl of a food processor. Pulse to mix.
Step 2: With machine running, slowly pour in oil--drop by drop at first, and then in a thin, steady stream as mayonnaise begins to thicken. If too thick, add a little more lime juice.
Step 3: Chill for one hour to blend flavors (optional).
