Step by Step Method
Step 1
Melt butter in heavy pot over medium high heat, add onions, celery and garlic and cook until translucent.
Step 2
Stir in flour and cook another minute, then stir in chicken broth a little at a time.
Step 3
Add milk and seasoning, reduce heat to medium and simmer, uncovered, for 15 minutes.
Step 4
Puree in blender, serve warm or chilled.
Step 5
Adjust seasoning to taste.
