  • 1/4 cup butter
  • 1 onion, chopped (small onion)
  • 2 cups celery, chopped (about 5 large ribs)
  • 1 teaspoon crushed garlic
  • 1/3 cup all-purpose flour
  • 1 1/2 cups low-sodium chicken broth
  • 1 1/2 cups whole milk
  • 1 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 1/2 teaspoon sugar (optional)

How to Make

  • Step 1: Melt butter in heavy pot over medium high heat, add onions, celery and garlic and cook until translucent.

  • Step 2: Stir in flour and cook another minute, then stir in chicken broth a little at a time.

  • Step 3: Add milk and seasoning, reduce heat to medium and simmer, uncovered, for 15 minutes.

  • Step 4: Puree in blender, serve warm or chilled.

  • Step 5: Adjust seasoning to taste.
