TO MAKE THE PANCAKE
Step 1
Heat a 12-inch cast iron skillet in a 450-degrees Fahrenheit oven for 5 minutes.
Step 2
Combine first 3 ingredients in a mixing bowl; beat at medium speed with an electric mixer until smooth. Add flour and salt; beat 5 minutes.
Step 3
Melt butter in a skillet; pour batter into hot skillet.
Step 4
Bake at 450-degrees Fahrenheit for 15 minutes; reduce oven temperature to 350-degrees, and bake 8 additional minutes or until puffed and browned. Remove from oven; spoon warm Apple Filling over pancake (pancake will deflate, though it barely deflates for me. I believe it's because you have to make sure that it's fully cooked). Sprinkle with powdered sugar, and dollop with whipped cream. Cut into wedges, and serve immediately.
TO MAKE THE APPLE FILLING
Step 5
Melt butter in a large skillet over medium-high heat; add apple, and cook stirring constantly, 12 minutes or until tender. Stir in honey and cinnamon; cook just until thoroughly heated through.
