Ingredients

The ingredients are:
  • FOR PANCAKE
  • 3 large eggs
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons butter (or margarine)
  • 1/2 cup powdered sugar (sifted, this measurement is approximate)
  • 1 1/2 cups whipped cream (this measurement is approximate)
  • FOR APPLE FILLING
  • 1/4 cup butter (or margarine)
  • 1 1/4 pounds apples (4 large Granny Smith, cored and sliced)
  • 1/4 cup honey
  • 1 teaspoon ground cinnamon

How to Make

  • TO MAKE THE PANCAKE

  • Step 1: Heat a 12-inch cast iron skillet in a 450-degrees Fahrenheit oven for 5 minutes.

  • Step 2: Combine first 3 ingredients in a mixing bowl; beat at medium speed with an electric mixer until smooth. Add flour and salt; beat 5 minutes.

  • Step 3: Melt butter in a skillet; pour batter into hot skillet.

  • Step 4: Bake at 450-degrees Fahrenheit for 15 minutes; reduce oven temperature to 350-degrees, and bake 8 additional minutes or until puffed and browned. Remove from oven; spoon warm Apple Filling over pancake (pancake will deflate, though it barely deflates for me. I believe it's because you have to make sure that it's fully cooked). Sprinkle with powdered sugar, and dollop with whipped cream. Cut into wedges, and serve immediately.

  • TO MAKE THE APPLE FILLING

  • Step 5: Melt butter in a large skillet over medium-high heat; add apple, and cook stirring constantly, 12 minutes or until tender. Stir in honey and cinnamon; cook just until thoroughly heated through.
