Step 1

Grind the rosemary into a powder with a mortar and pestle.

Step 2

Place all the ingredients except for the evaporated milk in a pot and bring to a boil; reduce heat and simmer for 30 minutes or until potatoes are cooked.

Step 3

Process with a hand held blender until just pureed, do not over process or you will have a starch gooey mess.

Step 4

Stir in the evaporated milk and taste and adjust seasonings.

Step 5

Enjoy.

Easy and delicious. I did sub fat-free half-and-half for the evaporated milk, as I don't like the taste evaporated milk has in soups, but it is still reduced fat with the cream and richer flavor.
