  • 2 cups chicken broth
  • 1/2 cup fat-free evaporated milk (Carnation evaporated milk)
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Grind the rosemary into a powder with a mortar and pestle.

  • Step 2: Place all the ingredients except for the evaporated milk in a pot and bring to a boil; reduce heat and simmer for 30 minutes or until potatoes are cooked.

  • Step 3: Process with a hand held blender until just pureed, do not over process or you will have a starch gooey mess.

  • Step 4: Stir in the evaporated milk and taste and adjust seasonings.
