Step by Step Method
Step 1
Place potatoes in a large saucepan; add water to cover. Add salt to taste. Bring to a boil. Reduce heat; cook, uncovered, 10 - 15 minutes or until tender. Drain and transfer to a large bowl. Add the vinegar and 1/2 teaspoon salt; toss gently to distribute evenly. Let cool slightly, about 10-15 minutes.
Step 2
Add eggs, scallions, onions (if using), celery, and pickles; toss gently to distribute well.
Step 3
Stir in mustard, celery seed and mayonnaise. Season with salt (if needed, taste before adding any additional salt) and pepper; mix gently with spatula to distribute ingredients evenly. Sprinkle with paprika and refrigerate until serving. Sprinkle with parsley, if desired, before serving.
