Ingredients

The ingredients are:
  • 5 medium potatoes, peeled and cubed (use waxy potatoes; russet, new potatoes, red, fingerling)
  • 2 teaspoons (more or less) - to be added to the boiling water
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon Kosher or sea salt
  • 6-8 hard-boiled large eggs, chopped
  • 1/2 cup green onions (scallions), thinly sliced
  • 1 small onion, chopped (optional)
  • 2 - 3 stalks celery, chopped
  • 1/4 cup sweet pickles, chopped
  • 2 tablespoons prepared yellow mustard (to taste)
  • 1 1/2 - 2 teaspoons celery seed
  • 1 cup mayonnaise (good quality, such as Hellman's)
  • Kosher salt, to taste, if needed
  • Black pepper, to taste
  • Paprika for sprinkling over the top
  • Chopped parsley for sprinkling over the top (optional)

How to Make

  • Step 1: Place potatoes in a large saucepan; add water to cover. Add salt to taste. Bring to a boil. Reduce heat; cook, uncovered, 10 - 15 minutes or until tender. Drain and transfer to a large bowl. Add the vinegar and 1/2 teaspoon salt; toss gently to distribute evenly. Let cool slightly, about 10-15 minutes.

  • Step 2: Add eggs, scallions, onions (if using), celery, and pickles; toss gently to distribute well.

  • Step 3: Stir in mustard, celery seed and mayonnaise. Season with salt (if needed, taste before adding any additional salt) and pepper; mix gently with spatula to distribute ingredients evenly. Sprinkle with paprika and refrigerate until serving. Sprinkle with parsley, if desired, before serving.
