"In this recipe I have used beef broth instead of the usual canned mushroom soup and used 2% cottage cheese instead of sour cream. It still tasted wonderful. The cottage cheese really melts out to a smooth texture. I added 3/4 teaspoon of mango chipotle spice just because I love spicy but I leave it up to you - spicy or moderate. Or use a couple of tablespoons of hot sauce making it a bit peppy! This recipe goes a long way so it is economical too! I served it ovr Tofu Fettuccine. Use the pasta of your choice. It is also tasty over mashed potatoes."
