Ham With Cheddar Chowder

"This chowder is chocked full of wonderfully satisfying flavor of ham, corn, potatoes and cheddar cheese. I originally discovered this recipe through Pinterest from My Gluten-Free Kitchen and have changed to suit our taste."

In Dutch Oven combine broth (or water), potatoes, carrots and minced garlic and bring to a boil.
Stir in salt, garlic powder & pepper.
Reduce heat, cover & simmer about 8-10 minutes, or until carrots and potatoes are tender.
Add ham & corn, reduce to simmer.
Meanwhile, in a medium saucepan, melt butter, then whisk in cornstarch.
Add the milk to butter & cornstarch mixture and cook until thickened and bubbly.
Add cheddar and stir until melted.
Pour cheesy contents into pot with ham and vegetables.
Heat throughly over medium heat, stirring occasionally.
Adjust seasonings to taste.
Serve with additional shredded cheddar, if desired.
