" I love throwing this recipe together for a light dinner or have it for my special Sunday brunch. Just a bit of potato in it gives extra body and if you don't overdo it not too many extra carbo. Mind you there is already all that cheese - but I love it!"

Step 1

Spray a no stick skillet with olive oil, saute the onions for 4 minutes, add green peppers for about another minute, potatoes, add ham, saute a further minute

Step 2

Add eggs and cheese, cook over medium heat, stirring occasionally until the eggs are set and it looks glorious - about 5 more minutes
