Step by Step Method

Step 1

Peel the potatoes and boil in salted water until they are tender.

Step 2

Mash them finely and add the ham, onion, milk, butter and salt and pepper.

Step 3

Using wet hands, shape the mixture into eight patties.

Step 4

Heat a heavy based frypan and add some the extra butter and when it is foaming add the patties.

Step 5

When they are brown on the first side turn them over and cook until you have a brown crust on the other side.

Step 6

Remove the patties to a plate, then break the eggs into the same pan - you may need to a little extra butter or oil.

Step 7

Fry the eggs until the whites are set but the yolks are still runny.

Step 8

Serve the has cakes with the eggs and scatter of parsley.
