Ingredients

The ingredients are:
  • 1 pound potatoes (4 medium)
  • 400 grams ham (cooked, without fat, finely chopped)
  • 2 small white onions (finely chopped)
  • 1/4 cup milk
  • 30 grams butter
  • Freshly ground salt, to taste
  • Freshly ground black pepper, to taste
  • 30 grams butter (extra)
  • 4 to 8 large eggs (depending on your appetite)
  • 2 tablespoons flat leaf parsley (roughly chopped)

How to Make

  • Step 1: Peel the potatoes and boil in salted water until they are tender.

  • Step 2: Mash them finely and add the ham, onion, milk, butter and salt and pepper.

  • Step 3: Using wet hands, shape the mixture into eight patties.

  • Step 4: Heat a heavy based frypan and add some the extra butter and when it is foaming add the patties.

  • Step 5: When they are brown on the first side turn them over and cook until you have a brown crust on the other side.

  • Step 6: Remove the patties to a plate, then break the eggs into the same pan - you may need to a little extra butter or oil.

  • Step 7: Fry the eggs until the whites are set but the yolks are still runny.

  • Step 8: Serve the has cakes with the eggs and scatter of parsley.
