Step by Step Method

Step 1

Preheat broiler with rack about 5 inches from heat.

Step 2

Beat together eggs, egg whites, salt and pepper in large bowl. Add broccoli, ham and pepper strips; mix well.

Step 3

Melt butter over medium heat in 10-inch oven proof skillet. Add egg mixture to skillet; cover. Cook 5 to 6 minutes or until eggs are set around edges. (Center will be wet.)

Step 4

Uncover; sprinkle cheese over frittata. Transfer to broiler and broil 2 minutes or until eggs are set in center and cheese is melted. Let stand 5 minutes; cut into wedges.

Nice frittata. I was only making this for myself so used a small frittata pan. I used the 3 eggs but no egg whites because of the size of the pan. Turned out really well and I devoured it. Thanks for sharing, Teresa. Made for FYC tag.
