Ingredients

The ingredients are:
  • 3 large eggs
  • 3 large egg whites
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ounces broccoli (florets, 1 1/2 cups)
  • 6 ounces smoked ham (deli ham, cut into 1/2-inch thick cubes, 1/4 cups)
  • 1/3 cup red bell peppers, sliced (roasted, bottled, drained, sliced into thin strips)
  • 1 tablespoon butter
  • 2 ounces cheddar cheese (shredded, 1/2 cup, sharp cheddar)

How to Make

  • Step 1: Preheat broiler with rack about 5 inches from heat.

  • Step 2: Beat together eggs, egg whites, salt and pepper in large bowl. Add broccoli, ham and pepper strips; mix well.

  • Step 3: Melt butter over medium heat in 10-inch oven proof skillet. Add egg mixture to skillet; cover. Cook 5 to 6 minutes or until eggs are set around edges. (Center will be wet.)

  • Step 4: Uncover; sprinkle cheese over frittata. Transfer to broiler and broil 2 minutes or until eggs are set in center and cheese is melted. Let stand 5 minutes; cut into wedges.
