"This is real comfort food and with ingredients I always have on hand!! I had a bunch of leftover cooked ham in the freezer and was looking for a way to use some of it up. I came up with this recipe which we really enjoyed. A few minutes of prep then the crock pot did the rest of the work."

Step by Step Method

Step 1

Whisk together the mushroom soup, milk and Parmesan cheese and set aside.

Step 2

Peel the potatoes and slice them into 1/4 inch thick rounds.

Step 3

Chop your cooked ham into bite sized pieces.

Step 4

Place the potatoes and the ham in the crock and sprinkle with all the seasonings.

Step 5

Pour the mushroom soup mixture over the potatoes and ham and place cover on crock pot.

Step 6

Turn the temperature on high and cook until the mixture starts to simmer, about 45 minutes to an hour depending on your crock pot.

Step 7

Turn the temp down to medium and cook for another 3 to 4 hours or until the potatoes are fork tender but not falling apart. Again this will depend on you crock pot.

I love scalloped potato dishes and this one is so easy. I had ham leftover from Easter and this was a good way to use it up. I also love cooking with mushroom soup. Very tasty.
