Step by Step Method

Step 1

Heat oven to 350 degrees Fahrenheit.

Step 2

Cut two acorn squash in half. Scoop out the seeds.

Step 3

Place them on a baking sheet with the cut side facing up. Cook for 45 minutes or until the flesh is very soft.

Step 4

Place oil in a skillet over medium heat. Add the onions and cook them until they are slightly soft, approximately 5 minutes.

Step 5

Add the garlic and cook it for about 1 minute.

Step 6

Next add the ground beef and cook it until it's not pink, then add the spinach until it's wilted.

Step 7

Season with the salt, pepper, and the herbs.

Step 8

Take the squash out of the oven; place the meat mixture evenly into the 4 squash.

Step 9

Place back in the oven for 10 more minutes so the flavors can blend together. Let them cool for 5 minutes upon removing.

This dish has Fall written all over it. The seasoning selection is so good here and matched very well with the acorn squash. In addition to spinach, also used a little mustard greens from the last that was left in the garden. I can definitely see ground turkey working real well here too. The meat mixture is wonderful! I wish I had read the other reviews and added a bit of cheese, but I was trying to keep it healthy. I drained my meat, which was not mentioned in the recipe....wonder if the grease was supposed to flavor the squash. They seemed sort of separate, but 5 stars for the meat filling!

These days recipe choices often depend on what is available, I was happy to have a lovely bag of spinach on hand and garden grown squash to make for a great meal. I agree with luvcooken that is one awesome tasting filling. A repeatable for sure.

Fantastic recipe! I could have eaten all the meat mixture before it hit the squash! Great flavours. Did add a grating of mozzarella to the top before putting back into the oven. Cut the recipe in half for the two of us. Thank you What for sharing. Made for Billboard Recipe Tag.
