Step 1: Heat oven to 350 degrees Fahrenheit.
Step 2: Cut two acorn squash in half. Scoop out the seeds.
Step 3: Place them on a baking sheet with the cut side facing up. Cook for 45 minutes or until the flesh is very soft.
Step 4: Place oil in a skillet over medium heat. Add the onions and cook them until they are slightly soft, approximately 5 minutes.
Step 5: Add the garlic and cook it for about 1 minute.
Step 6: Next add the ground beef and cook it until it's not pink, then add the spinach until it's wilted.
Step 7: Season with the salt, pepper, and the herbs.
Step 8: Take the squash out of the oven; place the meat mixture evenly into the 4 squash.
Step 9: Place back in the oven for 10 more minutes so the flavors can blend together. Let them cool for 5 minutes upon removing.
