"This is a simple recipe to make while you are grilling. There are only three ingredients to make a yummy side dish. If you want salt and pepper, add it at the table. What could be easier. The original recipe was without the cheese, but I added it."

Step by Step Method

Step 1

Divide the zucchini between two pieces of heavy duty foil about 18"x20".

Step 2

Place the zucchini on foil and spoon salsa over zucchini as much as you want; fold foil around the zucchini.

Step 3

Grill, covered for about 15-20 minutes or till veggies are tender; sprinkle some cheese if you want and leave on grill a few more minutes to melt.
