Step by Step Method

Step 1

Cut the ends off the squashes. Cut into 1 1/2 inch chunks. Combine the olive oil, garlic and shallot, 1 tablespoon basil and black pepper. Pour over the squash to coat. Cover and marinate about 1 hour.

Step 2

Cream together the butter, remaining basil, pepper and salt. Set aside.

Step 3

Place the vegetables in a grilling basket, or thread onto skewers. Grill over medium-hot coals (or preheated gas grill) 10 minutes, turning occasionally.

Step 4

Drain the pasta and put back into the hot pan. Add the basil butter and vegetables, removing the skewers if used.

Step 5

Stir in the Parmesan and parsley. Serve immediately.

I have made this before, and reviewed back at the other site...I thought I should definitely share my love of this recipe here. It's light, delicious, and makes a wonderful meal - and easy, which is a plus in the summer heat.

Wonderful served with chicken. We used 1 huge zucchini, 1 huge summer squash and 1 medium zucchini and oregano instead of the basil. Cooked in a grill pan on top of the stove. Very good and will definitely be making this again! Thanks for sharing!
