Step by Step Method

Step 1

In a bowl toss the onion wedges with olive oil and 1/2 teaspoon salt. If you are cooking on a grill thread the onions on skewers and cook for 10 minutes, turning often, until they are soft and charred. If you are cooking on a stove, heat a grill pan until hot and then grill onions on both sides until cooked through -- they may take up to 15 minutes if cooking on a stove. When onions are done, transfer them to salad bowl and let cool.

Step 2

To make dressing: in a bowl whisk together the dressing ingredients (pomegranate molasses - lime juice plus 1/2 teaspoon salt and some pepper). Pour dressing over onions and then add the herbs and toss.

I made this recipe with a very particular onion called:cipolla rossa di Acquaviva delle Fonti. It is a very sweet red onion. Honestly the best onions I ever had in my entire life. And the combination of this onion and the dressing, it was out of this world! Fantastic recipe.
