Ingredients

The ingredients are:
  • 1 pound onions, peeled and cut into 6 wedges (this should be 2 medium onions)
  • Olive oil
  • 3 tablespoons pomegranate molasses
  • 3 tablespoons pickle juice (Salam Suyu juice was specified or gherkin juice)
  • 1 teaspoon Aleppo pepper
  • 2 teaspoons sumac
  • 3 tablespoons water
  • 2 tablespoons lime juice
  • Parsley leaves, chopped
  • Mint leaves, chopped
  • Salt and pepper

How to Make

  • Step 1: In a bowl toss the onion wedges with olive oil and 1/2 teaspoon salt. If you are cooking on a grill thread the onions on skewers and cook for 10 minutes, turning often, until they are soft and charred. If you are cooking on a stove, heat a grill pan until hot and then grill onions on both sides until cooked through -- they may take up to 15 minutes if cooking on a stove. When onions are done, transfer them to salad bowl and let cool.

  • Step 2: To make dressing: in a bowl whisk together the dressing ingredients (pomegranate molasses - lime juice plus 1/2 teaspoon salt and some pepper). Pour dressing over onions and then add the herbs and toss.
