"Adapted from paninihappy blog, this is a simple but wonderful panini/grilled cheese. Because it does not have a lot of other ingredients, make sure you use good raclette (or gruyere) and honey. The amounts are guidelines only, go by your own taste"

Step by Step Method

Step 1

Preheat panini grill to medium-high heat (375 degrees).

Step 2

Brush melted butter onto outer sides of each slice of bread. Spread a thin layer of honey on the inside of one slice of bread. Top with slices of raclette (enough to cover bread, about 1/8″ thick). Place the other slice of bread on top, buttered side up.

Step 3

Grill sandwich for 3 minutes until cheese is melted and golden grill marks appear. Serve immediately and enjoy!

Tips

  • Sandwich press or heavy pan to weight down the bread when grilling

Wow was this good Marra. I did use a Raclette a paprika version, it was so good with the honey. I don't have a panini press, I just made it in a pan and put another pan on top of it, to flatten it. Worked beautifully, thanks for sharing this lovely recipe. I will be enjoying this again and again.

For a simple sandwich, this was really good. I love grilled cheese and have never thought to add honey. I also usually just put a few pats of cold butter on the bread, so the butter is uneven. By melting the butter and brushing it on, the bread was grilled like you would get it out...nice and even. I did use lorraine swiss and highly recommend using cheese that is either salty or has a strong flavor. Something too mild wouldn't give you the cheese and honey contrast.
