"Saw this on a Treet (1950s) meat product ad. Could use spam. They cut the bread same size as meat and put meat on top of the egg. It is a salad knife and fork sandwich. lol But was very pretty."

You want the salad to be firm, so mix everything else but mustard and mayonnaise together, seasoning to taste.
Step 2
And add only enough mayonnaise mixed with mustard to bind it. It was pretty stiff to hold up the meat.
