"This is a recipe from the Taste of Home website, by Betty Washburn. This is a great way to use your bounty (or your neighbors') of summer squashes. The other advantage is that you cook it on the grill, so no heating up the kitchen and it's a perfect side for almost any grilled meats/seafood!!!"

Step 1

Place the yellow squash, zucchini, tomato, olives and onion on a double thickness of heavy-duty foil (about 17x18 in.). Combine the oil, lemon juice, garlic salt, oregano and pepper; drizzle over vegetables. Fold foil around mixture and seal tightly.

Step 2

Grill, covered, over medium heat for 30-35 minutes or until vegetables are tender. Open foil carefully to allow steam to escape.

Step 3

Transfer vegetables to a serving bowl. Sprinkle with cheese.

Daily Inspiration

Loved this grilled squash -- it was awesome. Made as written and it was a wonderful addition to our Greek meal tonight. Will be making this dish often.
