Ingredients

The ingredients are:
  • 2 small yellow (4 to 5 pounds) squash, thinly sliced (summer squash)
  • 2 small (3/4 pounds) zucchini, thinly sliced
  • 1 tomato, seeded and chopped (medium)
  • 1 ounce pitted olives (ripe)
  • 2 tablespoons green onion, chopped
  • 2 teaspoons olive oil
  • 1 to 2 teaspoons lemon juice
  • 3/4 teaspoon garlic salt
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon pepper
  • 1/2 ounce grated Parmesan cheese

How to Make

  • Step 1: Place the yellow squash, zucchini, tomato, olives and onion on a double thickness of heavy-duty foil (about 17x18 in.). Combine the oil, lemon juice, garlic salt, oregano and pepper; drizzle over vegetables. Fold foil around mixture and seal tightly.

  • Step 2: Grill, covered, over medium heat for 30-35 minutes or until vegetables are tender. Open foil carefully to allow steam to escape.

  • Step 3: Transfer vegetables to a serving bowl. Sprinkle with cheese.
