Greek Style Baked Shrimp In Tomato Sauce And Feta

Step by Step Method
Step 1
Wash the shrimp under cold water, then pat dry using paper towels; place in refrigerator until ready to use. Partially drain the tomatoes leaving some of the juice, then coarsely chop the tomatoes (do not drain all of the juice).
Step 2
Grease a 3-quart casserole dish.
Step 3
In a large saucepan heat olive oil over medium-high heat; add the onion and cook for about 3 minutes or until softened. Add the garlic, chili flakes and dried oregano; cook stirring for 2 minutes. Add the partially drained chopped tomatoes, seasoned salt, black pepper and fresh basil; bring to a simmer over medium heat.
Step 4
Reduce heat to low and simmer uncovered for about 35 minutes (a little more won’t hurt but watch that the sauce does not get too dry) stirring frequently and seasoning with more salt and pepper about halfway through if necessary.
Step 5
Meanwhile cook the pasta in boiling water until al dente; drain and place in a large bowl (you may want to mix with 2 tablespoons of oil to prevent the pasta from sticking together).
Step 6
After cooking the sauce immediatey mix in the uncooked shrimp until just starting to turn pink (do not cook the shrimp thoroughly it will finish cooking in the oven).
Step 7
Place cooked pasta in a large bowl then stir in shrimp/tomato mixture, 2 tablespoons of the parsley and half of the feta cheese Transfer to baking dish and sprinkle with parsley and the remaining feta cheese. Cover loosely with foil place in a preheated 350 degree F oven and bake for 20-30 minutes or until bubbling.
