Step by Step Method

Step 1

Preheat oven to 425 degrees F.

Step 2

Sift flour, baking powder, baking soda, and salt together into mixing bowl.

Step 3

Whisk in cornmeal.

Step 4

Combine sugar and egg and beat until light.

Step 5

Add (sour milk) buttermilk, and shortening; combine slowly with dry ingredients.

Step 6

If milk is quite thick, a little more may be needed to thin batter.

Step 7

Stir only until ingredients are mixed.

Step 8

Grease(butter) pan (9 x 13 x 2) generously, and cover with thick sprinkling of cornmeal.

Step 9

Pour batter in pan, and bake in hot oven (425 degrees F.) about 25 minutes, or until nicely browned.

Cornbread is one of my favorite things, so you know that every bite, I’ll be salivating. The taste of this cornbread is right up my alley, and it was delicious, but I don’t know if it was me, but the batter turned out thick and it didn’t rise appropriately. I believe that maybe it needed more buttermilk(?). Also, there was too little batter to fill a 9 x 13” pan, so baked it in a 10” cast iron pan and it worked. Regardless, it was delicious.
