Bangers & Mash With Onion Gravy

Step by Step Method
Step 1
Preheat oven to 180C.
Step 2
Place potato in a large saucepan and cover with cold water and bring to the boil over high heat and cook for 15 minutes or until tender and then drain well and return to the pan with buttermilk and using a potato masher or fork to mash until smooth.
Step 3
Heat a non-stick pan over medium heat and cook the sausages, turning occasionally for 8 minutes or until cooked through and transfer to a plate and cover to keep warm.
Step 4
Cook onion in a frying pan over medium heat, stirring for 3 minutes or until onion softens and then add gravy mix and 1 cup (250ml) hot water and bring to the boil and cook, stirring for 3 minutes or until gravy thickens slightly and then add tomato sauce and cook for a further 1 minute or until combined.
Step 5
Meanwhile cook the peas in a saucepan of boiling water until heated through and drain and keep warm.
Step 6
Divide mash among serving plates and top with sausages and serve with the peas and onion gravy.
