"Altho its early origin is a matter of some debate, what we all came to eventually know as GREEN GODDESS salad dressing was first bottled & sold commercially by Seven Seas in the early 1970's. Named for its color, over time it became associated w/the use of avocado even if it didn't deserve the connection. Now true avocado salad dressings are called just that, but there's a large variety of them. I went searching for 1 I could "adopt as my own forever", but it wasn't so easy. It came down to 2 choices that were somewhat similar, so I decided to "blend" them & enter the result here so I don't have to do this again. This avocado dressing has a Tex-Mex flavor profile & works well for me. I hope it will for you as well. Enjoy!"

Step by Step Method

Step 1

Halve the avocado, remove pit & scoop the avocado pulp into a blender (See Note #1). Add the remaining ingredients & blend until smooth & creamy. Chill for at least 1 hr in your refrigerator in an airtight container B4 use.

NOTE #1: I have a wide-mouth jar w/a lid that I use often for recipes like this & then I reach for my trusty hand-held blender so I can get the job done easily & use the jar for storage

NOTE #2: Yield is 2 cups or 8 generous 1/4 cup servings

Tips

  • Standard blender or hand-held stick blender (my choice).

Very good dressing! I didn't have fresh lime juice and used 1 TB. of bottled. It was a bit tart, but still yummy on our lettuce salad tonight! Made for your football win 2016

Delicious! Easy to make and really flavorful. The dressing comes out a little on the thick side, but we like it that way. The only change I made was to add a little more ranch dressing mix and chipotle chili powder. Looks wonderful and tastes just as good as it looks.
