Step by Step Method

Step 1

Preheat oven to 425 degrees F.

Step 2

Line a rimmed baking sheet with parchment paper.

Step 3

Place the gnocchi, mushrooms and herbs on baking sheet and then add the olive oil and salt; toss; spread it all in a single layer.

Step 4

Roast for 20 minutes.

Step 5

Place the arugula into 4 bowls or plates and then top with the gnocchi mixture and then dollop each serving with the ricotta.

Step 6

Finally squeeze the lemon over each serving and if desired drizzle with additional olive oil.
