Ingredients

The ingredients are:
  • 1 pound gnocchi (fresh or shelf-stable)
  • 10 ounces mushrooms, trimmed and quartered
  • 3-4 sprigs herbs (such as rosemary, oregano, thyme or sage)
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 6 cups arugula
  • 1/2 cup ricotta cheese
  • 1/2 lemon

How to Make

  • Step 1: Preheat oven to 425 degrees F.

  • Step 2: Line a rimmed baking sheet with parchment paper.

  • Step 3: Place the gnocchi, mushrooms and herbs on baking sheet and then add the olive oil and salt; toss; spread it all in a single layer.

  • Step 4: Roast for 20 minutes.

  • Step 5: Place the arugula into 4 bowls or plates and then top with the gnocchi mixture and then dollop each serving with the ricotta.

  • Step 6: Finally squeeze the lemon over each serving and if desired drizzle with additional olive oil.
