Step 1: Preheat oven to 425 degrees F.
Step 2: Line a rimmed baking sheet with parchment paper.
Step 3: Place the gnocchi, mushrooms and herbs on baking sheet and then add the olive oil and salt; toss; spread it all in a single layer.
Step 4: Roast for 20 minutes.
Step 5: Place the arugula into 4 bowls or plates and then top with the gnocchi mixture and then dollop each serving with the ricotta.
Step 6: Finally squeeze the lemon over each serving and if desired drizzle with additional olive oil.
