Step by Step Method

Step 1

Prepare all fruit by washing, peeling if desired, removing pits and slicing into bite-size pieces. Melons may be scooped out with a melon baller, if desired.

Step 2

Combine all fruit in a large ceramic bowl.

Step 3

Mix lime juice, rind, honey, and ginger together. Pour over fruit, toss, cover and marinate for at least six hours.

Step 4

Serve chilled or at room temperature.

I made a few fruit only changes to this recipe, as I had no honeydew or plums. I used candied ginger which I sliced as it was diced. I also used strawberries, passionfruit, blueberries. kiwi fruit, watermelon and pomegranate, as I had this fruit left over from our Christmas platter. We really did love this fruit salad, the dressing really added a difference, with the slight heat of the ginger, and the not too sweet honey and lime dressing it was truly delicious. DH enjoyed his served with cream, and may I say it was the first time ever in 30 plus years of marriage I have ever seen him eat cantaloupe. This fruit salad works magic! Thanks Mikekey I will make sure I have candied ginger and limes on hand over summer! I have a feeling I am going to need them.
