Step by Step Method

Step 1

Mix eggs with salt, pepper, nutmeg, and milk.

Step 2

Melt butter.

Step 3

Cook in smaller saute pan with lid cause they want it to be tall.

Step 4

Add bell peppers; saute. Add mushrooms saute. Add eggs; stir once. Add spinach.

Step 5

Cover with lid ajar. Cook on low. Cook until semi solid (you dont have to do this step).

Step 6

Serve like pizza with rye toast.

We loved this! I used a regular sized skillet based on Pat's comment and I'm glad I did - the center still took a while to be set. Delish, none the less!

This made for wonderful light lunch though I used 3 eggs for one serve as they were on the small side and used my smallest frypan and it took about 10 minutes before they were cooked through and the bottom was just a bit too cooked but still tasted delicious so next time I will use a medium pan which will make for a thinner omelet but should cook better I think.
