Step by Step Method

Step 1

Preheat oven to 425°F.

Step 2

In a large bowl, whisk together spices and oil.

Step 3

Add mushrooms, potatoes, onions, peppers and garlic to bowl with spices and oil.

Step 4

Toss to coat in the mixture then transfer to a large baking dish.

Step 5

Cover the dish tightly with aluminium foil and place in the oven.

Step 6

Cook for 30 minutes then remove the foil and cook for a further 15 minutes until the potatoes are tender, the mushrooms are browned and the onions have lightly caramelized.
