Ingredients

The ingredients are:
  • 1/4 cup sunflower oil
  • 2 pounds button mushrooms,quartered
  • 2 pounds potatoes, cubed
  • 1 cup red onion, sliced thin
  • 2 cups red bell peppers, sliced thin
  • 2 cloves garlic, smashed,(can use More)
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili flakes
  • 1/4 teaspoon ground coriander seeds
  • 1/4 teaspoon black pepper

How to Make

  • Step 1: Preheat oven to 425°F.

  • Step 2: In a large bowl, whisk together spices and oil.

  • Step 3: Add mushrooms, potatoes, onions, peppers and garlic to bowl with spices and oil.

  • Step 4: Toss to coat in the mixture then transfer to a large baking dish.

  • Step 5: Cover the dish tightly with aluminium foil and place in the oven.

  • Step 6: Cook for 30 minutes then remove the foil and cook for a further 15 minutes until the potatoes are tender, the mushrooms are browned and the onions have lightly caramelized.
