Step 1: Preheat oven to 425°F.
Step 2: In a large bowl, whisk together spices and oil.
Step 3: Add mushrooms, potatoes, onions, peppers and garlic to bowl with spices and oil.
Step 4: Toss to coat in the mixture then transfer to a large baking dish.
Step 5: Cover the dish tightly with aluminium foil and place in the oven.
Step 6: Cook for 30 minutes then remove the foil and cook for a further 15 minutes until the potatoes are tender, the mushrooms are browned and the onions have lightly caramelized.
