Step by Step Method

Step 1

Cover the cleaned potatoes with water in a saucepan, bring to a boil, simmer about 20 minutes or until they are cooked

Step 2

When the potatoes are almost done add a teaspoon of oil to a non stick skillet, medium heat, saute the garlic for a minute, add parsley salt & pepper, mix well about another minute or two.

Step 3

Drain the potatoes, toss with 2 teaspoons of oil

Step 4

Add potatoes to the skillet, toss with the garlic and parsley, heat for about 1 minute Serve

I used white baby potato's and as they were large ones I cut them in half, and made exactly as written. I did not have any Parmesan on hand so I did not use any, but I do think it would have taken these potato's up a notch. But even without any Parmesan this was a wonderful recipe, with great flavours from the garlic. These potato's served as a side, would compliment any meal. A must try recipe I will certainly be making again.

Soo delicious ! sauteing the garlic and parsley adds so much flavour, a wonderful way to make parselied potatoes, thanks for posting.  I used small white potatoes quartered, can hardly wait for the new potatoe season.
