Step 1: Cover the cleaned potatoes with water in a saucepan, bring to a boil, simmer about 20 minutes or until they are cooked
Step 2: When the potatoes are almost done add a teaspoon of oil to a non stick skillet, medium heat, saute the garlic for a minute, add parsley salt & pepper, mix well about another minute or two.
Step 3: Drain the potatoes, toss with 2 teaspoons of oil
Step 4: Add potatoes to the skillet, toss with the garlic and parsley, heat for about 1 minute Serve
