Ingredients

The ingredients are:
  • 1 to 1 1/2 pound potatoes (12 small new red potatoes, well scrubbed)
  • 4 large garlic cloves, minced
  • 2 tablespoons parsley, chopped (fresh)
  • 3 teaspoons olive oil (divided)
  • Salt and pepper, to taste

How to Make

  • Step 1: Cover the cleaned potatoes with water in a saucepan, bring to a boil, simmer about 20 minutes or until they are cooked

  • Step 2: When the potatoes are almost done add a teaspoon of oil to a non stick skillet, medium heat, saute the garlic for a minute, add parsley salt & pepper, mix well about another minute or two.

  • Step 3: Drain the potatoes, toss with 2 teaspoons of oil

  • Step 4: Add potatoes to the skillet, toss with the garlic and parsley, heat for about 1 minute Serve
