Step by Step Method
Step 1
In a large saucepan heat the oil.
Step 2
When hot, add the rice and onions and saute until the rice begins to lightly brown and turn opaque.
Step 3
Add the tomato, tomato paste, garlic and salt to taste.
Step 4
Stir and saute until garlic is golden.
Step 5
Add the broth.
Step 6
Stir together to mix until the tomato paste has completely dissolved.
Step 7
Bring to a boil.
Step 8
Add peas and reduce heat to low, cover, and let cook for 20 minutes.
Step 9
Remove the saucepan from the heat and let it sit for 5 minutes covered.
Step 10
Fluff and season to taste.
